A friend of mine asked me to write something about potatoes. So I will include my favorite recipe for a smashed potato, specifically a Yukon gold.

Herbed Yukon Gold Smashed Potatoes

1 pound Yukon Gold Potatoes
1 cup Fresh Herbs
1/2 to 1 cup Olive Oil
Salt and Pepper to taste

Wash and rinse the potatoes, cut in quarters and add to a pot of water. Boil till tender. Drain and place in a mixing bowl.
Add your chopped fresh herbs, you can use one or a mixture of whatever you like, add the oil, use more if needed. Smash, season with salt and pepper and enjoy.
Serves 6-8 people.
