Pepper Steak Lo Mein
10oz. Package dry Lo Mein Noodles
2 tablespoons Vegetable or Sesame oil
2 inch piece of Fresh Ginger peeled and minced
1 ea. Red, Orange, Yellow Bell Peppers thinly sliced
1 medium Red Onion thinly sliced
1 lb. Steak thinly sliced
2 tablespoons Soy Sauce
2 tablespoons Brown Sugar
1 cup Beef Broth

Prepare the lo mein noodles as instructed on package, drain, rinse, add vegetable or sesame oil and set aside.
Mince the ginger, thinly slice the peppers, onions and beef. In a separate bowl, marinate the beef in the soy sauce, brown sugar and half the ginger. Let beef marinate for about 15 to 20 minutes in the refrigerator.
When ready to cook, place a small amount of oil in a soup pot set on medium high heat. Add steak with marinade, cook thoroughly, add the onions, peppers and the other half of the ginger.
Then add the beef broth, if you want it more like a ramen dish you can add more beef broth.
Add the noodles and heat through. Season to taste with salt and pepper or more soy sauce.
