Muffaletta Sandwich Relish (Picnic Food)

1 small red onion minced

1 small red pepper minced

1 small green pepper

1/2 cup black olives minced

1/2 cup pepperoncini minced

1/4 cup olive oil

1/4 cup red wine vinegar

1 tablespoon fresh oregano or

2 tablespoons dried oregano

Combine all ingredients in a bowl and refrigerate one hour to overnight so that flavors can blend together. You can add salt and pepper as you would like. This can be used for the Muffaletta sandwich but also as a vegetable mix to put into a pasta salad to perk it up a bit. If you are not very secure in your mincing skills, just chunk all the vegetables and place them in a food processor. Pulse until it is similar to pickle relish consistency.
