Heavenly Banana Cream Cake

So it may not have been a long winter here in Ohio but, it has been a dreary one.  I for one am glad to see that spring is right around the corner. Now, we just need the temperature to recognize it is spring. In an effort to do that I offer this recipe that makes me thing of spring time and picnics.

Heavenly Banana Cream Cake

1 box Angel Food cake mix

1 box Vanilla Instant Pudding mix

1 8oz. carton Heavy Cream

1 tblsp. Powdered Sugar

3-5 medium Ripe Bananas sliced

To begin, place a mixing bowl and whisk or whisk attachment in the freezer for 15 minutes. Make sure both are clean and dry before going into the freezer.

Prepare the angel food cake according to box directions, in your favorite pan shape. Keep in mind whatever shape you make it in should be compatible with the dish you want the cake to end up in for service.

While baking the cake, prepare the vanilla pudding and refrigerate to set up. Slice the bananas and fold into the pudding. If the pudding is not fully set before adding the bananas that is okay.

Now remove your mixing bowl and whisk or whisk attachment from the freezer. Place the powdered sugar in the bowl and the heavy cream on top. Whisk until stiff peaks form. Place back in refrigerator lightly covered with plastic so as not to dry out cream.

When your cake has cooled, slice in half so you have a top and bottom. Place the bottom layer on the serving dish or platter you will end up serving the dessert from. Spread 1/2 of the banana and pudding mixture on the bottom cake layer.

Carefully place the top onto the cake. Spread the other half onto the top. At this point if your top layer breaks, it is not the end of the world. You are going to cover it with pudding. No one will know.

Then take the whipped cream from the fridge and either spread or dollop on the top of your cake. At this point you can garnish however you wish, walnuts, toffee pieces, chocolate syrup, it is up to you. That is the fun with it, you can do whatever you want.

All that is left to do is to eat and enjoy!
