Quick Meals

So we have all had those days, we come home from work and don’t quite have the energy to make a full meal to satisfy the family.
What do we use as our go to?
Fast food or delivery, we are all guilty of it but, it is not the best choice.
Instead how about a quick meal that will make everyone happy and not have the extra fat or salt from delivery or fast food.
One example is chicken breast seasoned as you like on a bed of raw rice. Use either water or chicken stock, enough to cover the rice, place in the oven, covered with foil at 350 degrees for 45 min.
Just before the chicken is done, prepare a fresh salad or some frozen vegetables either steam in bag or sautéed in a pan with olive oil.
There you have a quick meal that gives you time to relax before dinner and time to spend with the family.
