I have been looking for something seasonal to post and a few days ago I found what I have been looking for to post.
I made Italian Sausages and Asparagus on the grill. I also made Smashed Red Skin Potatoes. The Sausage is pretty simple, find your favorite brand and put on the grill. I prefer a house made brand from a local grocery store chain. The Asparagus is pretty easy too, clean off the tough ends and place on the grill till tender. The potatoes are simple as well but have a few more steps to them. Below is the recipe I followed, my own I might add.
Smashed Redskin Potatoes
12 small Redskin Potatoes
2 tsp Salt
2 tsp Black Pepper
1 cup Shredded Cheddar Cheese
1/4 cup Olive Oil
Tabasco Sauce (optional)
Place washed redskin potatoes in medium saucepan with water over medium heat, boil till tender. This should take 15 to 20 minutes. In the mean time, preheat the oven to 350 degrees. When potatoes are tender drain them and place on oiled baking pan. Smash the potatoes until they crack and spread. Season with salt and pepper, Tabasco sauce and sprinkle with cheese. Bake in oven till cheese melts and potatoes begin to brown, 10 to 15 minutes. Serves 4 to 6 people.
